I have made all of these recipes myself. I always try to show the original source of the recipe, but am constantly editing them to suit our tastes (so technically they should all say "Adapted from..."). The portions are generally small since my family doesn't consume much food in one sitting.

Cream Soup Substitute

When I discovered I was out of cream of chicken soup for Whitney's famous enchilada recipe, I tried out this cream soup substitute. It worked fantastically! Makes 7 batches.












2 c dry powdered milk

¾ c cornstarch

¼ c chicken (or beef) bouillon granules

½ tsp pepper

1 tsp powdered onion

Mix together and store in a covered container in the refrigerator.


To use:

1¼ c cold water

1/3 c mix

Combine water and mix in a small saucepan. Cook, stirring constantly, until thickened. Substitute this sauce for a 10 oz can of condensed creamed soup.















Add herbs such as basil, thyme, dill or ¼ c minced fresh onion when preparing (optional).
