I have made all of these recipes myself. I always try to show the original source of the recipe, but am constantly editing them to suit our tastes (so technically they should all say "Adapted from..."). The portions are generally small since my family doesn't consume much food in one sitting.

Creamed Tuna (Anita Heap)




2 c milk (½ c + 1/6 c powdered milk + 1.5 + 3/8 c water)
2 Tbsp cornstarch
1 tsp salt
¼ tsp pepper
¼ c butter or margarine
2 cans of tuna (12 oz total)
2 cubes pureed vegetables (optional)
Bread, toasted

Blend cornstarch in with cold milk so there are no lumps. Add all ingredients and stir constantly on medium heat until mixture thickens and comes to a boil. Boil for 1 minute. Remove from heat and add tuna and pureed vegetables. Serve over toast.

I love to mix sweet peas with my tuna and bread, but Jon and the kids prefer to keep them separate.

1.5 Times Recipe
3 c milk (3/4 c powdered milk + <3 br="" cwater="">3 Tbsp cornstarch
1½ tsp salt
¼ tsp pepper
6 Tbsp butter or margarine
3 cans of tuna (18 oz total)
3 cubes pureed vegetables (optional)
Bread, toasted

  1. Hey Jen, when I was at Wal-mart yesterday I found 12 oz cans of Tuna in the Starkist brand. Just thought I'd let you know.
