Description

I have made all of these recipes myself. I always try to show the original source of the recipe, but am constantly editing them to suit our tastes (so technically they should all say "Adapted from..."). The portions are generally small since my family doesn't consume much food in one sitting.

Cheesecake (Anita Heap)

$7.13 with store-bought cherry pie filling; includes 3% tax;
$4.90 with homemade filling if strawberries are free/homegrown; $7.39 with homemade filling-storebought strawberries


Crust
1½ pckg graham crackers, crushed (2 c crumbs)
1/3 c sugar
½ c melted butter
Combine in bottom of 9x13 dish.

Filling
1 8oz pckg cream cheese
¼ c lemon juice
1 can sweetened condensed milk
Blend thoroughly. Spread on crust. Refrigerate.

Topping
1 can cherry pie filling or:
2 c whole strawberries (or blueberries...)
1 c sugar
3 Tbsp cornstarch
½ c water

Mash berries (will measure ~1 c). Mix sugar and cornstarch in 2-qt saucepan. Gradually stir in water and mashed strawberries. Cook over medium-high heat, stirring constantly, until mixture thickens and boils. Boil and stir 1 min, cool. Spread strawberry glaze over cheesecake. Cut extra strawberries in half and sprinkle over top, if desired. Refrigerate 1 hour or until set.
