½ c packed brown sugar
½ c ketchup
1½ lb lean ground beef
¾ c milk
2 eggs
1½ tsp salt
¼ tsp ground black pepper
1 small onion, finely chopped or 2 tsp onion powder
¼ tsp ground ginger
¾ c finely crushed saltine cracker crumbs (~15)
½ c grated zucchini or other veggies (optional)
Preheat oven to 350°. Lightly grease a 5x9 inch loaf pan. Press the brown sugar in the bottom of the prepared loaf pan and spread the ketchup over the sugar. In a mixing bowl, mix thoroughly all remaining ingredients and shape into a loaf. Place on top of the ketchup. Bake in preheated oven for 65 minutes or until juices are clear and internal temperature reaches at least 160° (half recipe: 40 min for 2 mini loaf pans). *Use leftovers to make Dirty Rice.
Try forming meatloaf into a heart for Valentine's Day or sometime during February. You can shape it one of two ways:
1 -- Press the brown sugar in the bottom of the prepared loaf pan in the rough shape of a heart and spread the ketchup over it. In a mixing bowl, mix thoroughly all remaining ingredients and shape into a heart on top of the ketchup.
2 -- Cut into a heart when finished baking.
This meatloaf included zucchini and tasted fantastic (even though the lighting is terrible).
