Description

I have made all of these recipes myself. I always try to show the original source of the recipe, but am constantly editing them to suit our tastes (so technically they should all say "Adapted from..."). The portions are generally small since my family doesn't consume much food in one sitting.

Breakfast Burritos (Karen Spahr)

¼ lb sausage (the round rolls like Owens; Farmland Original pork sausage-MSG free)

6 large eggs (can use more eggs for more burritos)

3 Tbsp water (for more eggs 1 Tbsp water/2 eggs)

Salt and pepper to taste

Shredded cheese (½ cup or so)

~5 twelve” Tortillas

Cook sausage. While the sausage is cooking, in a separate bowl mix eggs, milk, salt and pepper. Turn the heat down to medium (at least). Drain grease from the sausage. Add egg mixture. Stir. When it starts to cook, add 2 handfuls of cheese. Continue cooking, stirring often. When eggs are almost done, turn off the heat. When eggs are just about done (formed into scrambled eggs, with just a tiny bit of liquid), remove pan from heat. Put egg mixture in a tortilla. Sprinkle with cheese. Fold like a burrito.

To save for later: wrap in plastic wrap or a zipper bag and put in freezer.

When ready to eat, remove from plastic, put on plate, and heat in microwave for about 2½ min.
