I have made all of these recipes myself. I always try to show the original source of the recipe, but am constantly editing them to suit our tastes (so technically they should all say "Adapted from..."). The portions are generally small since my family doesn't consume much food in one sitting.

Macaroni and Cheese (Anita Heap)

Updated 3/8/13. $1.99 with tax

2 c macaroni noodles
2 c milk (½ c + 1/6 c powder and 1.5 + 3/8c H20)
2 Tbsp cornstarch
1 tsp salt
¼ tsp pepper
¼ c butter
2 c cheese
½ c or 4 cubes cauliflower purée (optional)*

Boil water in saucepan. Add noodles and boil 12 min. Drain. In a separate pan, blend cornstarch with cold milk so there are no lumps. Add next ingredients and stir constantly on medium heat until mixture thickens and comes to a boil. Boil 1 min. Add as much cheese you want to make it cheesy. Stir in purée until melted. Add noodles to sauce and serve while hot.

*Purées from The Sneaky Chef. If puréed in a Vitamix use 4 cubes; if regular blender: 2 cubes.

Veggie tip: Steam 2 branches of broccoli. Cut heads into small pieces and mix into macaroni.
